Speedy Pizza

Method

1. Preheat oven to 220°C/gas mark 7 or preheat grill.
2. Place the bases onto a baking sheet/ grill pan
3. Combine the passata with mixed herbs and season with black pepper.
4. Spread the passata mixture over each base.
5. Sprinkle over a small amount of the grated mixed cheeses.
6. Build your own pizza with desired toppings (don’t add too much as the topping will melt all over the baking sheet).
7. Finish off with another sprinkling of cheese.
8. Bake in the oven for 12-15 minutes or under a hot grill for 8-10 minutes until the cheese has melted and the top golden brown.

6 wholewheat pitta breads or wholemeal English muffins cut in half
200ml passata (sieved tomatoes)
1 teaspoon dried mixed herbs
Black pepper, to season
125g (4½oz)mozzarella cheese, thinly sliced (or grated)
100g (3½oz) mature cheddar cheese, grated
Toppings – mixed vegetable
½ pepper, deseeded and chopped
6 mushrooms, sliced
12 cherry tomatoes, sliced
3 tablespoons canned sweetcorn, drained
4 spring onions, trimmed, drained
Toppings – tuna, sweetcorn and olives
½ can of tuna, drained
3 tablespoons canned sweetcorn, drained
4 spring onions, trimmed and sliced
12 black olives, chopped
Toppings – ham and mushroom
3 slices of ham, chopped
6 mushrooms
